📝 Ingredients (6 Muffin Cups):

• 6 large eggs

• 1 cup fresh spinach, chopped

• ½ cup shredded cheese (cheddar or mozzarella)

• ¼ cup diced bell peppers or onion

• Salt & pepper to taste

• Optional: crumbled bacon or sausage



🔥 Instructions:

  1. Preheat oven to 350°F.

  2. In a bowl, whisk eggs with salt and pepper.

  3. Stir in spinach, cheese, and veggies.

  4. Pour mixture evenly into a greased 6-cup muffin tin.

  5. Bake 18–20 minutes until puffed and set.

• 6. Cool slightly before removing.
