Rainbow Quinoa Veggie Bowl

📝 Ingredients (2 servings):

• 1 cup cooked couscous or millet

• ½ cup roasted sweet potato cubes

• ½ cup steamed or roasted broccoli florets

• ¼ cup cherry tomatoes, halved (red & yellow)

• ¼ cup cucumber, sliced or chopped

• ¼ cup shredded red cabbage

• 1 cup baby spinach or greens

• Optional: tofu, chickpeas, or tahini drizzle

🔥 Instructions:

1. Cook couscous or millet according to package directions; let cool. 

2. Toss cubed sweet potatoes with olive oil, salt, and roast at 400°F for 20 mins. 

3. Steam broccoli until tender-crisp or roast with sweet potatoes. 

4. Slice all raw veggies and halve cherry tomatoes. 

5. In a bowl, layer couscous, veggies, and greens side by side. 6. Top with optional tofu or chickpeas and drizzle with tahini or dressing.

🍽 Quick Tips:

• Swap couscous for quinoa or brown rice.

• Add hummus or lemon-tahini sauce for extra flavor.
