One-Pot Chickpea Curry


📝 Ingredients (4 Servings):

• 2 cans chickpeas, drained

• 1 can coconut milk

• 1 can diced tomatoes

• 1 onion, chopped

• 3 cloves garlic, minced

• 1 tbsp curry powder

• 1 tsp ground cumin

• Salt & pepper to taste

• Optional: fresh cilantro, cooked rice



🔥 Instructions:

1. Sauté onion and garlic in oil until soft.

2. Add curry powder and cumin, cook 1 min.

3. Stir in chickpeas, tomatoes, and coconut milk.

4. Simmer uncovered for 15–20 mins.

5. Season to taste and serve over rice.
